Days 11, 12, 13, 14, 15, 16, & 17: Vacation in Maui!

Sorry for the lack of posts days 11 through 17.  What a way to kick start a new blog, eh?  I do have the best excuse ever, though.  We were on holiday in Maui.

How was eating vegan and gluten free while on vacation?  Easy in some ways, difficult at times.  Our resort was amazing, and our suite had a full kitchen.  I stopped at Costco on our way to the resort (just outside of the airport parking lot), and was able to stock up on tofu, fresh veggies, fruit, wine, hummus, etc.  I knew from our previous trip to Maui that there's a grocery store across the street from the resort for items not needed in bulk.  My husband and I went out for his birthday dinner Saturday night, and I chose to eat Lau Lau that evening.  Something I can't get here on the mainland, to say the least!  It was so delish.  All in all, 98% of what I ate was vegan.  100% of what I ate was gluten free.  I gave vacationing as a GFV a fabulous shot & feel great about what I ate.  That's all that matters. 

While out for an early morning run out first morning on the island, I found a fabulous little store about a quarter of a mile from our resort called Maui Farmers Market & Deli on Lower Honoapiilani Road.  They totally cater to those of us choosing a vegetarian and/or vegan lifestyle, and had lots of gluten free options for me.

I wanted to spend more time milling around in there, but my husband and son were sick of me reading labels & doing my weirdo hippie thing.  But there were three soups offered on the hot bar that were not only vegan.....but gluten free!  Organics.  Locally grown.  I walked away with an armful of items.  Well, I made everyone else carry it back to the resort, but you catch my drift.  I also made us all stop so we could take pictures of us as pineapples because....well....why not?  :)

Oh, I even managed to eat vegan during a luau (see pic below)!  Nothing appeared to have butter on it or in it, and the menu was fairly clear about the ingredients being used.  The coconut cream sweet potatoes were my FAVORITE.  I could have eaten them 'til I popped, and cannot wait to recreate the dish here at home.
